Kate, you have inspired me. I keep forgetting there is a KAB school out here in WA, about 90 minutes away. I’m looking at classes and may do a baguette class if I can find a good day. I have a pan and I’ve made them before, but I’m quite sure I have LOTS of room for improvement.

Thanks for this delightful romp! But you will never convince me that making bread is “easy.” I have only ever made bricks that don’t rise, every single time I try.

I miss the nisu (Finnish sweet bread) my grandmother made. While I enjoy baguettes, and liked your piece about making them, and agree that King Arthur is the best, if you knew how to make good nisu you would deserve worship.

Agreed. I'm scheming all kinds of ways to make my oven hot and steamy and rework the timing of my sourdough etc. But first we gotta eat those loaves!
